Using desktop application in a VDI environment

Our organisation is proposing to implement a VDI desktop environment but we are unsure of the general licesing for common desktop applications such as Adobe Acrobat, Crystal Reports, Viso, Project etc:  There doesn't appear to be any definitive guidance in the vendors products 'Terms of Use' documentation to cover this.  I know that Snow would be able to monitor our proposed VDI environment but vendors EULAs seem to have no concrete information about licesing their products in this type of situation.  Has anyone out there implemented a VDI desktop on their estate?  Can any one offer any guidance or information about the vendors rulings on use and control of desktop type applications in this senario?
